Connoisseur Michael's Venison & Yak Steaks with Quinoa Salad

What’s in the marinade?

Smoked Salt

Black Pepper

Chopped Fresh Garlic

Red Wine Vinegar

Olive Oil

Marinade the steaks for at least one hour.

What’s in the Quinoa Salad?

Garlic

Ginger

Red Onion

Pine Nuts

Red Currants and Dried Cranberries

Red Pepper Flakes

Olive Oil

Red Quinoa

Parsley

Fresh Orange Juice

The Quinoa Salad is spicy and juicy adding another dimension to the hearty Yak and Venison steaks.  The steaks are broiled to about medium so that they keep their juiciness and flavor.  Quinoa and Yak/Venison is not a usual combination; Quinoa originating in South America; however, together the meat and grain add a new dimension to the old “meat and potatoes” lifestyle.  The dish was thoroughly enjoyed at the competition, but, as all good losers must, I pay homage to those dishes whose tastes and complexities outpaced my own.

 Editors Note: Michael remains tight-lipped about his sauce preparation;

all I have are a couple surreptitiously snapped photos.

Will Michael take his secrets to the grave? Only time will tell!
