Connoisseur Jon's Homemade Marshmallows

Elizabeth and I needed some marshmallows for a pumpkin cheesecake recipe, so we decided to make our own.  We found this recipe on crazycrashedadrenals.blogspot.com.

4 envelopes unflavored gelatin
1 ½ cups water
3 cups granulated sugar
1 ¼ cups light corn syrup
¼ teaspoon salt
2 teaspoons vanilla extract
confectioners sugar

First, put ¾ of a cup of water in your stand mixer with 4 envelopes of gelatin, combine the two, and let it rest while you do the rest.

Get a good sized pot and combine the other ingredients, saving the confectioners sugar and vanilla for later.  Stir and bring to a boil on the stovetop, and then heat the sugary mixture to 240 degrees, or soft ball stage.  Remove from heat and slowly pour into your gelatin mixture with the stand mixer slowly combining the ingredients.  Then, when the pot is empty, turn your mixer up to high and give it 15 minutes.  Then, add the vanilla and mix until incorporated.

Grease and confectioners sugar a glass baking pan and the pour in the marshmallow.  Spread it into the pan with a greased spatula. 

Then, dust it with confectioners sugar from a mesh sieve.  Let it sit out overnight and then cut into the size you want.  Use additional powdered sugar to dust individual marshmallows.

We had a lot of fun making these, and they are delicious and easy to make.  Put some on hot chocolate for a delicious treat!  The pumpkin cheesecake was a success, and we will make it for Christmas 2: The Revenge of Kris Kringle, so keep an eye out for the recipe.
