Dubliner Cheese

I remember the first time I ever had Kerrygold Dubliner cheese. I had been on the hunt for a truely sharp cheese and came across this innocuous wax-papered package at the supermarket's cheese counter. I brought it home and carved myself off a slice... it was then that I first fell in love with Dubliner cheese.

The super sharp, firm, white cheese comes pre-packaged in 7oz blocks most of the time, but sometimes you can find a cheese counter where they carve their own blocks. The flavor of this cheese is mouthwateringly sharp with a subtle and very pleasing honey-like sweetness. While Dubliner can be melted to make a stellar sandwich, my favorite way to enjoy this cheese is thinly sliced with water crackers or tart apple slices.
