
Here is a recipe for those times when don’t really feel like cooking a fancy or healthy meal but want something good that uses up leftovers.
You will need:
About 3 cups of leftover refried beans
4 thick slices of hearty bread, in this case I used a half loaf of rye from making rubens the night before
Enough cheddar cheese to get yourself 8 thick slices.

Put the bread on a cookie sheet and slather each slice with ¾ to 1 cup of beans (the beans should be quite congealed from spending some time in the fridge)

Put a couple slices of cheddar on each piece of beany-bread

Throw the whole shebang under the broiler at around 500F for about 5-7 minutes and you’ve got yourself something truly great.
Let them cool for about 10 minutes and then dig in!
